A concept eveloped in partnership with Dario Cecchini: the world-famous leader of an ideal cohesion between the artisans of meat and the advocate of the renaissance of this ancient craft, as well as of the ethics of respect towards animals, people and the raw materials used.
If innovation is not only "disruptive", but it also lies in the ability to gradually improve what already exists, the idea of going beyond the borders of Panzano village in Chianti, where the first Cecchini Panini Truck is born, is the natural expansion of this winning format. The first new location opened in the greenery of Franciacorta, in Erbusco (BS), allows to strengthen the food valley offer created by our founders Martino de Rosa and Carmen Moretti – whose heartfelt friendship with the Cecchini family is the cornerstone of the project development and expansion.
Immersed in the colors and scents of the Franciacorta’s vineyards and farmhouses, next to the restaurant "Quintale", we open "Quintalino": a convivial, more casual lively space designed to house the first activity of Cecchini Panini. The choice of the first location of Cecchini Panini is therefore not accidental, but purposely studied to bring together the visionary spirit of Martino De Rosa and the unique expertise of Dario Cecchini and to seal a relationship that goes beyond work: a long-lasting friendship. This is just the first step of the journey. With a long-term growth and diversification strategy through new competitive channels (Food Trucks and "Botteghe"), we plan to scale-up the “Cecchini Panini” to reach the world with a series of new openings in different locations, hence bringing to everyone both the core product and an inclusive and convivial experience whose values can be appreciated and shared by all.
Such values are rooted in the business and life's philosophy of his demiurge, Dario Cecchini. A Philosophy which revolves not only around the “Nose to Tail” sustainable cooking and butchery mantra – using the whole animal without waste to respect the sacrifice – but also around the theme of the suburbs with a double, interconnected purpose: to reach out the widest possible audience with the aim of contributing to the regeneration and enhancement of non-mainstream areas by yielding positive externalities such as social cohesion, territorial branding and local development; and to make a high-quality product accessible to all by democratizing the price.
Caring about social sustainability, we have successfully managed to avoid burdening the costs on the final consumer thanks to Dario's expertise and know-how, and to the competitive vertical integration of the artisanal process – meat is directly supplied by the “Antica Macelleria Cecchini” where it is processed, so as to guarantee the total traceability, transparency, and sustainable Cecchini’s meat standards of the final product.
Overall, the mix of high-quality food in all its farm-to-table goodness and convivial entertainment, creates the perfect rustic, genuine festival environment to experience the "Panino" Cecchini.
